Discover the perfect pairing of our Cuvée Royale Brut Nature and this Tartar of Sea Bream.
Ingredients (for 8 people) :
Tartar:
- 2 sea breams of 800g
- 1 oyster
- 50g of caviar
- 2 lemons
- 1dl of olive oil
- Salt, pepper
Cuttlefish ink tuile:
- Squid ink 8g
- Flour 10g
- Water 60g
- Olive oil 60g
- Mix and make 16 tiles
Cream:
- 20cl of heavy cream
- 2g of gelatine
Preparation :
- Heat and mix 2g of gelatine
- Spread the cream on a plate
- Let it cool down
- Cut 16 discs of cream
- Lift the sea bream fillets, remove the bones and chop the fillets.
- Open and chop the oyster and mix with the sea bream fillets with salt, pepper, lemon juice and olive oil.
- Arrange in a small circle, 16 pieces: tartar, cream disk, caviar quenelle and tuile.
